Meat Loaf Recipe

Classic Meat Loaf
prep:40min bake:60min oven:350

2 Tbsp. unsalted butter
11/4 cups onions finely diced
11/4 cups portobello or desired mushrooms, finely chopped
1/2 cup celery, finely diced
1/2 tsp. dried thyme
1 tsp. finely chopped garlic
1/2 cup grated carrot
1 cup fresh bread crumbs
1/2 cup half and half or milk
2 eggs
11/2 lb ground chuck
11/2 lb ground pork
4 slices bacon, finely chopped
13/4 tsp. kosher salt
1/2 tsp
. ground black pepper
1/2 cup ketchup
2 Tbsp. brown sugar
2 tsp. cider vinegar

  1. preheat oven to 350. In large skillet heat butter until melted and foaming. Add onions, mushrooms, and celery. season to taste with kosher salt and black pepper. cook 3 minutes, being careful not to brown.
  2. Sprinkle thyme over onion mixture. Rub Garlic and pinch of salt into paste; add garlic. cook and stir in grated carrot; remove from heat. Cool completely. Meanwhile, soak bread in half and half. Lightly beat eggs
  3. In large mixing bowl combine ground meats, bacon,cooled vegetables, and bread crumb mixture. Sprinkle the 13/4 tsp. salt and pepper. Using hands, mix until well blended.
  4. Turn mixture into rectangular baking dish. Using both hands, shape into a 9x5 inch loaf. Bake on middle rack for 1 hour or until meat thermometer reaches 155 let rest 10 min before slicing. Serves 8

My anniversary gift


OK so every year Nick and I celebrate our anniversary by getting each other gifts according to our anniversary year, this years gift was candy. I know what you are thinking that dose not look like candy, well Nick decided to stretch his imagination this year, because earlier in the week our coffee pot died and since I had been talking about getting a Keurig, he decided that that was what he wanted to get me. So by calling it a candy apple red coffee maker it still applied to our rules. So anyway I love it it is a one cup coffee pot so I never have to feel bad about wasting coffee if I am the only one who want to have a cup, plus you can switch flavors every cup with out having to have a huge stock of coffee on hand. And what did I get Nick you ask? A candy heart patterned Necktie lame right? OK well what's a girl to do? buying a guy something candy themed is a lot harder than it looked.

Meatloaf
So the other night I made meatloaf and it looked so pretty that I could not resist taking a picture of it, and boy was it good. I found the recipe in my Better Homes and Gardens magazine it calls for a ton of ingredients but it is wort it in the end it is so flavorful and always bakes up perfect.

Cute as a picture


Well Just thought I would catch you all up on whats been going on around the Pratt house lately. Since the last time I blogged Lainy has now got a second tooth that is almost through, she is now Ten months old and is getting ready for the big "1" year. Nick Lainy and I will be traveling to California at the end of September to vacation, and Visit Nicks Sister Angie and her family. We are planing on doing some site seeing along with some beach time and just having fun hanging out with the family. When we get back it will be birthday mode for me because I will only have 4 days to plan and get Lainy's first birthday together.... Whew, well that's all for now.
